Vegan Pesto

I love this pesto, it’s really simple to make and can easily be stored in the fridge. I mainly whizz it up for my favourite green bean salad but I’ll add it to anything – you have to try it dolloped onto hummus. it’s amazing.
If you haven’t tried making pesto before then you really should give this a whirl, I know I won’t buy the shop bought stuff ever again.
Vegan Pesto 
10 brazil nuts
30g basil
Juice of a lemon
3 tbsp olive oil
1 garlic clove
Salt & pepper
  1. Put the brazil nuts into a food processor – if you have a choice of size, smaller is better – and blitz for about 30 seconds
  2. Add the rest of the ingredients and blitz again for a couple of minutes. You can choose between a smooth or coarse pesto, either will taste great!
Add to salads, dollop on hummus or stir through pasta, most of all just enjoy!
