Spiced Chocolate Granola

Developing healthy breakfasts is one of my favourite challenges as it needs to fit in with our busy lifestyles. Homemade granola is easy to make in advance which makes it as simple as pouring milk onto cereal before you head off to work.
I always think of pecans as an autumnal taste, teamed with a gingery kick this granola will set you up perfectly for the colder mornings. Have with thick yogurt or milk, I love to pour on almond milk purely for the chocolatey milk at the end!
Spiced Chocolate Granola
Makes 6 portions
160g oats
100g pecans
50g flaked almonds
4 tbsp cacao powder
4 tbsp chia seeds
4 tbsp coconut oil
2 tbsp maple syrup
1 tbsp ground ginger
  1. Preheat the oven to 160/gas mark 4, please the coconut oil in an ovenproof dish and place in the oven to melt
  2. In a bowl, mix the oats with the cacao powder, ground ginger and chia seeds
  3. Pour in the coconut oil, maple syrup and mix well. Transfer to a baking sheet and cook in the middle of the oven for 12-15 minutes stirring frequently once cooked set aside to cool
  4. While the oat mixture is cooling, roughly chop the pecans and add to mixture along with the flaked almonds. Serve with milk or yogurt storing leftovers in a sealable container
