Simple Hummus

I love hummus, there is nothing better than a ‘picky’ lunch of chick pea crackers, crudites and lovely thick hummus. Sometimes I just want a straight up hummus and this recipe fits that very bill.
Simple Hummus
1 tin of chickpeas,
2 garlic cloves
Juice of 1 lemon
3 tbsp tahini
Salt & pepper
Olive oil for serving (optional)
Pine nuts (optional)
Paprika for serving (optional)
  1. Reserve a spoon of chickpeas then add the remainder along with the garlic, lemon, tahini and seasoning to a food processor and blitz until smooth. If it seems a little too thick you can add a little water to loosen it up
  2. Decant into a bowl, scatter the reserved chick peas and pine nuts  on and a drizzle little olive oil and paprika over the top
