Bounty Squares

If you asked the old me what my favourite chocolate bar was, I would definitely have said a Bounty – the red one, the one that no one else liked! I’m not sure why it’s taken me so long to recreate a healthier alternative, maybe I thought it would reignite the love and send me on a chocolate binging downward spiral! I’m pleased to say that it hasn’t, this recipe is so simple that it’s easier make than contemplate going to the shop to buy one.
Bounty Squares
Coconut Layer 
200g creamed coconut
4 tbsp coconut oil
2 tbsp coconut milk
120g desiccated coconut
2 tbsp raw honey
Chocolate layer 
4 tbsp coconut oil
4 tbsp cacao (or cocao)
2 tbsp coconut milk
2 tbsp raw honey
  1. Gently melt the coconut oil and the creamed coconut on a very low heat
  2. Add the desiccated coconut, coconut milk and honey to a food processor and pour over the melted mixture. Blitz until thoroughly combined
  3. Pour the coconut base into a lined loaf tin and place in the fridge
  4. To make the chocolate layer gently melt the coconut oil on a low heat, add the cacao, coconut milk and joey and which until combined, pour over the coconut base and sprinkle with a little more desiccated coconut. Return to the fridge for an hour then cut into squares – store in air tight container
These squares keep well in the fridge or you can freeze them if you can’t trust yourself while they’re around!
